
BBQ Chicken Nachos
BBQ Chicken Nachos are a top tier summer meal! Layered with juicy chicken, smoky barbeque sauce, and lots of cheese, every bite will have you coming back for more.
What you need

cup bbq sauce

cup sour cream

oz pinto beans

box tortilla chips

tsp paprika

tsp garlic powder

tsp salt

tsp onion powder

tsp chili powder

tsp black pepper

lb skinless boneless chicken breast

oz corn

oz sharp cheddar
oz colby jack

bunch green onion

jalapeno pepper
Instructions
1: Preheat your grill or skillet for cooking the chicken. 2: Brush the chicken breast with olive oil, and season with salt, black pepper, paprika, chili powder, onion powder, and garlic powder. 3: Add the chicken to the preheated pan and cook until seared on both sides and internal temperature reaches 165°F, about 12-15 minutes. Brush the chicken with BBQ sauce on both sides before removing and let rest. 4: To the same pan, add the rinsed and drained pinto beans and sweet yellow corn. Add the diced red onion and stir well to heat up. Season with salt and black pepper to taste. Remove from the heat. 5: After the chicken has rested, cut into small pieces then set aside. 6: On a large lined baking sheet, layer tortilla chips, followed by shredded cheddar and Colby jack cheese, the shredded chicken mixture, drizzle of BBQ sauce, and the corn and pinto beans mixture. Top with more shredded cheese and repeat the steps to create layers with toppings on each piece. 7: Bake in the oven at 350°F until the cheese is melted, about 5-10 minutes. 8: Remove from oven, drizzle with sour cream and more BBQ sauce. Top with choppd green onions, jalapeño slices, and drizzle sour cream over the top. 9: Serve immediately and enjoy your BBQ Chicken Nachos!
